Ghost Poo aka Cream Cheese Clouds

Cream Cheese Clouds aka Frozen Cheesecake Bites


Ghost Poo (see what I did there since it's almost Halloween?!), aka Cream Cheese Clouds, aka Frozen Cheesecake Bites!  Fun and yummy and a great way to grab a little sweet dessert or snack.  I pulled this off of Linda's page as Cream Cheese Clouds.  My father (also a low carber!) came up with the Ghost Poo because he's funny like that.  I wrote the recipe below as basic Cream Cheese Clouds or Frozen Cheesecake Bites but if you'd like to swirl them to make them Ghost Poo, just spoon the mixture into a sandwich bag and then cut one of the end tips of the bag off to make a home pastry bag.  You can mix up the flavors by using different extracts or adding some unsweetened cocoa powder, a bit of pumpkin puree, etc.  Fun! *INDUCTION FRIENDLY*

24 clouds
1 net carb per cloud/serving

8 oz cream cheese, softened
1/2 cup unsalted butter, softened
3/4 cup granular Splenda (or sweetener of choice)
1/2 tsp vanilla (I used 1/4 tsp lemon and 1/4 tsp vanilla)

Beat everything with an electric mixer until fluffy.  Drop by bite-size spoonfuls onto a wax paper-lined baking sheet to make 24 clouds.  (or spoon into sandwich bag, cut the tip off to make a pastry bag)  Freeze until firm, at least 1 hour.  Store in the freezer and eat frozen.

Once frozen, these store in the refrigerator just fine.

  1. These are in my freezer right now! I didn't swirl them, I used a small cookie scoop and I made 22 of them. Can't wait for them to be ready to eat!

  3. Yes, they are to die for!!!! Hubby likes them to. I always have some in the freezer. I used a tablespoon for each cloud and got 24 out of the batch.

  6. I made these today but since I didnt have any vanilla I used cinnamon instead and OMG they are amazing! I spooned it all into a baggie and made little hershey kisses. I love them. Thanks for the recipe!

  7. ok so I made these last night. But I don't think they came out right. it says to mix until fluffy mine never got fluffy it came out as more of a cake batter consistency. Is this right or did I do something wrong? And if so what do you think I did wrong?

    1. I just did the same with the cocoa powder to change it up and added some smores sf skinny syrup and only used about 1/2 cup of splenda ,yummmy

    2. I know.. usually Fat bombs are easy to stop at one or 2 but these are so super scrumptious.. it IS HARD to stop...we kept saying wow at every taste.

  18. Delicious! I made these and added few tablespoons of unsweetened cocoa powder and several packets of powdered stevia to suit my taste. Whipped up into chocolate goodness! Thank you for sharing your recipe. -PJ Led.

  22. Hi, I couldn't imagine how these were a carb per piece (or myself eating only one piece at a time!!) So I did the macros using neufchatel cheese instead of regular cream cheese and Swerve as the sweetener, and came up with 1g carb per 3 pieces (saying 8 servings). So am going to try making them with these ingredients. Will let you know.

  25. I'm disappointed. Used the vanilla and lemon extract and it tastes like rubbing alcohol:( What happened? And cheesecake is my very favorite dessert. Help. Can I save them somehow or just chuck them?

    1. I put my sweetener granules in the coffee grinder to turn it to POWDER before adding it and it turned out superb.. super smooth!!

  36. I made them last night. When they were mostly set I ground up about 14 roasted/ salted almonds and dabbed the Little Ghost poos in the crumbs to create a crust.

  38. I don't habe swerve but I have stevia sweetener in a powder form. Can I use that? If so how much? The bag says the ratio is equal to the normal amount of granulated sugar.

    1. I used a mixture of Stevie and SPLENDA and it came out fluffy and creamy. Just read the package. It should tell you if it measures cup for cup of sugar. If so, go by this recipe.

  39. I added about a cup of Smuckers all natural peanut butter. Yum yum. Next time I am going to try some peppermint extract with the vanilla. Then the time after that I will try sugar free instant cherry jello a little at a time until it tasted like I imagine.

  40. I tried a tsp peppermint extract with the vanilla and had a wonderful after dinner mint. Then I tried half of the 6 oz pkg of sugar free instant jello. What a sweet treat. Today I want to try some sugar free maple syrup with my sugar free peanut butter.

I Used erythritol & stevia but I "powdered" it in the coffee grinder before adding it so mine was super smooth and the tatste _ UNREAL!!! these are the MOST delicious fat bomb I have EVER tasted...Hubby & I loved it spooned from the bowl as soon as we made it... we had it on a keto scone with keto berry jam and this soft serve on top instead of cream.. WOW an amazing fat bomb... I also added a few drops of LEMON essence and also used a good tablespoon of lemon juice .. thanks for the amazing recipe... so easy too!

  42. I used REAL lemon juice freshly squeezed and I used a tablespoon plus a few drops of lemon essence and ALSO the Zest of 1 lemon.. they turned out to be the best fat bombs I have ever made.. I will be making these again for sure
